Chicken Salad Recipes

Chicken Salad Recipes are fantastic meal to make for health and wealth. It’s quick, easy and super healthy if done right.
When buying chicken I advise you go a little over your normal budget and buy chicken that is well raised and fed. I think the ethical side of this outweighs cost.
Then for salad ingredients, make sure they are fresh and look to use things like rocket, spinach, carrots and generally veggies and salad stuff that contains great vitamins and minerals.
Ok some quick chicken salad recipes ideas.
Preparing the chicken.
Cut a few medium sized organic free range chicken breast into small strips.
Grill on medium heat for around 15-20 mins or until cooked completely through.
Leave to cool covered on the counter and refrigerate once at room temperature.
Chicken and Beetroot Salad.
- 2 prepped Chicken Breasts
- half a head of iceburg lettuce
- two handfuls of baby spinach
- 1 carrot, grated
- 1 red pepper, sliced
- 1/3rd jar of pickled beets
- Olive Oil
Mix all ingredients except the beets in a large bowl. Add the beets and a little of the juice. Then drizzle with a little olive oil and toss the salad until ready. Serve immediately.
Chicken Salad With Rocket and Walnuts
- 2 prepped Chicken Breasts
- Two large handfuls of rocket
- Two large handfuls of baby spinach
- 1 carrot, grated
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- Olive Oil
- Balsamic vinegar
Mix all the ingredients (except the oil and vinegar) in a large bowl. Then in a small separate bowl mix 2 parts vinegar to 1 part oil to create a light dressing to drizzle over the salad on serving.

A great idea for future recipes this. Thank you for sharing it. Have you noticed how so many people appear to be cooking again? I wonder if the lack of funds due to the current climate has something to do with it and we all appear to be cooking again! its great!

Hey, thanks for your comment Setcuko.
I think it’s largely due to limited funds and also a pushed effort for well being. Strangely though we are not seeing companies that provide packaged foods losing big profits yet!
