Pickled Red Cabbage Recipe (With Video)

I love making Pickled Red Cabbage. It’s simple and nutricious and goes well as a side with an endless amount of dishes. I sometimes just have some of this in some simple flat bread as a quick snack, or served with hummus and vegetables. It’s also a great side to roast dinners or nice added to a salad.
Ingredients (makes 1 large jar)
- 1/2 medium red cabbage
- 1/2 cup of white vinegar
- glob of balsamic vinegar
- Handful of salt
Directions:
- Shred your cabbage into thin slices with a sharp nice.
- Put the cabbage into a strainer or bowl and liberally cover with a handful of salt
- Massage the salt into the cabbage and break it up a little more
- Allow it to sit for 10-15 mins
- Fully rinse the salt off the cabbage
- Stuff the cabbage into a large jar (an old olive jar works well)
- Pour in 1/2 cup of white vinegar
- Pour in a glob of balsamic vinegar
- Fill the rest of the jar with water
- Put the lid on tightly, shake the jar and put into the fridge for 2-5 days before eating
